These are currently served (come by and see for yourself), drunk up because the guests liked it so much and the wine of the corresponding vintage (this is in the nature of things) could no longer be reordered. Some wines are not served anymore because they were put back, saved, just before they were drunk. And finally, you can read some interesting facts about the wine, the cellar and the pressing process.

2024 Rotling Muschelkalk Winery Johannes Beyer
With the expansion of our range of wines from regional winegrowers to include the fine wines from Dorndorfer Weingut Beyer, the first Rotling has now also made it to the bar. The nose reveals an aromatic, fruity bouquet with floral notes and gooseberry aromas.
2024 Müller-Thurgau Muschelkalk Winery Johannes Beyer
Lemon yellow, slightly greenish in colour, this Müller-Thurgau cuts a fine figure in the glass. Apple and lychee flavours with a delicate nutmeg note on the nose.
2022 Cuvée Glockendreiklang Dorndorfer Rappental Winery Johannes Beyer
Situated between Dorndorf and Kirchscheidungen, the Dorndorfer Rappental with its south-facing slopes along the Unstrut is well known to connoisseurs of local wines. The red grapes that Johannes Beyer uses for this complex and multi-faceted red wine with a more international styling come from this location.

A Rotling is a Rotling
Rosé wines are made from red grapes. Rotling, however, is made from red and white grapes. This gives the Rotling its unmistakable character, which distinguishes it from rosé wines, even though they may be similar in the glass. Rotling is a speciality in its own right.

Located around 15 kilometres northwest of Freyburg, the Steigraer Hahnenberge vineyard is one of the showpiece sites of the Saale and Unstrut wine-growing region.
2023 Klingers Muse Winery Grober Feetz
If the winemaker decides to try something and creates a cuvée, he can name it badly after the grape variety. Here there are even three together: Gelber Muskateller, Traminer and Scheurebe. Why did the vintners decide to use ‘Klinger's muse’ on the label?

Méthode rurale - Sparkling wine traditionally made
An old, simple and natural form of sparkling wine production (rurale for rural - surprise, surprise) originating from France. Only one fermentation takes place. This is also the main difference to the traditional method known from champagne, for example.

The Burgundy Myth
Burgundy or, as the French call it, Bourgogne, is the region between Dijon and Lyon, which also includes Chablis and Grand Auxerrois, located to the north-west of Burgundy proper. It can be said to be the wine-growing region with the highest reputation, not only in Europe but worldwide.

All sensory skills are required here, quoting the winemaker: multi-layered aromas on the palate, grippy phenolics, fine spicy juiciness and delicately salty minerality.

Degrees Oechsle
The must weight is determined by the winegrower in degrees Oechsle. The term “must weight” refers to the amount of sugar dissolved in the grape juice. During wine production, the sugar directly influences the alcohol content of the wine. This means that the must weight cannot be overestimated when it comes to wine production and the time of harvest.

Weißburgunder (Pinot blanc)
Weißburgunder, also known as Weißer Burgunder, Pinot Blanc or Klevner, is a white grape variety. It most probably originates from Burgundy.
2023 Chardonnay VDP Ortswein Winery Böhme & Töchter
Hand-picked and partly matured in oak barrels, partly in stainless steel tanks, an all-round successful Chardonnay a la Saale-Unstrut.
2023 Weißburgunder VDP Ortswein Winery Böhme & Töchter
With fresh chalky minerality and an elegant Burgundy aroma with pear, mirabelle plum and quince. The Weißburgunder (Pinot Blanc), classified as a local wine according to VDP regulations (here: Freyburg), was matured in wooden barrels as well as in stainless steel tanks.
2023 Lagrein Grill Winery A. V. Elzenbaum, Tramin
On a journey through the wine cellars of South Tyrol, we tasted this 2023 Lagrein from the single vineyard Grill in Tramin, South Tyrol, from the local winery A. V. Elzenbaum, among others.
2023 Riesling Winery Böhme & Töchter
This Riesling is characterised by its lively acidity, straightforward and elegant structure. It tastes light like a tropical fruit and is characterised by subtle minerality. The nose has aromas of vineyard peach, green apple and lime blossom.
2022 Spätburgunder Erstes Gewächs Winery Böhme & Töchter
Juicy texture on the palate with good tension, powerful, acidity and tannins provide tension, unfiltered. Fully ripe cherry, spicy and herbal on the nose.
2021 T & M Rotweincuvée Winery Böhme & Töchter
This combination is complex and we also found this red wine complex when we tasted it on site in Gleina: A red wine cuvée made from Cabernet-Dorio and Cabernet-Dorsa. Both crosses are based on Dornfelder and Cabernet Sauvignon (that's probably not quite right, we'll have to do some more research).
